I seasoned the eggplant with harissa and let it roast slowly in the oven. I sprinkled the spicy roasted chickpeas with dukkah herbs. To keep the dish low in calories I serve cauliflower rice with pomegranate and coriander. With it you get a fresh tahini-coconut yogurt dressing. Enjoy!
