Mexican stuffed pepper

I have stuffed the bell pepper with marinated chipotle beef with pico de gallo. I topped the bell pepper with an organic egg and chili powder. The bell pepper is on a bed of cauliflower rice, cabbage, crispy corn and beans with roasted red onion. With it you get a nice slightly spicy salsa. Enjoy!
